Skillet Chicken

8 Bone in, skin on chicken thighs

2 T Tio Ernesto's Sazon Cubano (the blend you use depends on the flavor profile you want)

2 T Butter

1 Lemon sliced

Chopped Flat parsley for garnish

Ingredients

Heat a skillet (preferably iron) over high heat

While the skillet is heating, sprinkle Tio Ernesto's Sazon Cubano over the chicken thighs

Put the butter in the hot pan, and let it sizzle. Let it spread out in the pan.

Sear the chicken thighs on high for two minutes per side

Cover, reduce heat to medium and cook 10 minutes skin side down. Flip to skin side up and cook covered 10 minutes more

Increase the heat to high and make sure the skin side gets one last sear (~2 minutes). Add in the lemon slices for a little citrus zing. Serve skin side up with lemon slices. Garnish with a little chopped flat parsley

Instructions

The chicken will create its own juices. I was worried that the skillet might be too dry, but that is not a problem.

Any of the Tio Ernesto's seasoning blends will work here. If someone wants a little heat, Fuego is great. Otherwise Classic or Low Sodium will work just fine.
